At the Summit, I made a climate commitment to food. What this means for me is reducing my meat and dairy intake, reducing my food waste, and shopping locally whenever I can. What does this look like in action? I’ve been getting creative with my cooking – using different varieties of mushrooms as a meat substitute or chickpeas as a healthy plant-based protein alternative. I love trying new recipes and am always up for something new. My current favorite dairy alternative is oat milk, although I’ve been slow to transition to dairy-free cheese! I’m looking forward to the warmer weather where I can start shopping at my local farmer’s market to eat produce that is in-season and support our local produce farmers.
