I was pleased and encouraged to learn that switching to a more plant-based diet would have such a positive impact on climate change, especially when I considered the collective impact with others that are likely making a similar commitment. Such a switch seemed like a low hurdle to clear with other anticipated benefits…exploring new foods, supporting local ag, and improved personal health among them. Our starting point included meat pretty regularly for dinner and a weekend breakfast on occasion. More than meatless Mondays, we’ve quickly and quite easily transitioned to weekly dinners balanced 50/50 between meat and plant-based entrees. We found a wide variety of appealing recipes in the book “Love real Food” by Kathryne Taylor. The author also has a website that we’ve found helpful. We’re having fun, eating well, and taking positive climate action.
